SHERWOOD, Ore. — Sherwood’s new wine bar is closing.

Noly’s Wine Bar opened in July 2025 in Sherwood, and is already looking for a new location.

The wine bar served beer on tap, cocktails, American-Mexican fusion food like tacos, nachos, and po’ boy sandwiches, as well as wines from all over at 21900 S.W. Alexander Ln. Ste. B & C, behind the Hampton Inn. 

They decided to close January 3 and look for a new spot, according to owner Kaitlynn Castillo.

“This is a tough location, so we are looking for something new. We're not sure where we're going to land at the moment,” Castillo said. “We're not sure how long it's going to take.”

Castillo said Noly’s packed the patio during the summer, but lost momentum during the school year.

"It's not a goodbye, it's see you later," Castillo said.

Launching Noly’s

The California family launched the business because Castillo’s spouse Nate is a winemaker and sommelier who loves the Willamette Valley. Now, they live in Lafayette with their two young children.

“Not only are we here doing local wines, but we're also tasting wines from around the world,” Castillo said. “We give wine its stage to say, ‘What do we love about the Willamette (Valley)? What do we love about other places, and why is the Willamette great?’”

She said originally, their idea was to create a wine bar combined with a food cart to park out front, but since this location had an industrial kitchen, they went ahead with the concept of Noly’s wine bar serving food paired — and named after their kids.

Noly’s currently employs two, but had five employees during the summer rush. 

The wine bar hosted fun events from live music to Korean or French pairing nights to stand-up comedy.

“We are maybe going to be doing some pop-ups at other established places … my husband likes to teach wine-tasting classes,” Castillo said.

Nate Castillo said he grew up in the fine dining business and participated in James Beard Awards, and that Noly’s caters events and weddings as well. If there are leftover fresh ingredients, he pickles it for later. All the art hanging on the walls is created by his family or from a special place in his life story, like a dried grape vine he planted when he was 16 years old.

“(Noly's) is not just someone’s idea. It’s my life,” Nate said, and there have been successes along the way during their time in Sherwood.

“Comedy has been standing-room only from day one. We did pairing events … it was fun," Nate said.

He said success is when guests come in, and he gets to share his family’s story.

“What we’re going to do next … is going to give me an opportunity to do more of what I’m passionate about: what you would expect to see at a wine tasting room, more wine-related classes, and things like that,” Nate said.

Join in the comedy closing party 

To close down the location with a laugh, Noly’s is hosting a big stand-up comedy evening on Saturday, Jan. 3 featuring comics Dylan Jenkins, Brent Lowery, and Adam Pasi.

“We need help emptying some kegs and cases of wine before we move,” Castillo said. “We will be doing a crazy everything-must-go wine case sale and beer specials until close. Help us lighten our load for the move.”
